Dr. Jae W. Park is a professor of food science majoring in Surimi and Surimi Seafood at Oregon State University since 1992. He was Director of Technical Services at SeaFest/JAC Creative Foods (Motley, MN), which is currently owned and operated by Trident Seafoods Corp.
He has published over 150 refereed journal articles and book chapters, which are almost all related to his specialty Surimi and Surimi Seafood. He also published two books (Surimi and Surimi Seafood) in 2000 and 2005 - as only surimi books written in English since 1992.
He was elected as an IFT Fellow in 2007. Recognition as an IFT Fellow is a unique professional distinction conferred on individuals with outstanding and extraordinary qualifications and experience for their contributions to the food science and technology field.
